Or can I simply just drive it for a while afterwards and it will relearn everything?

negative battery cable should always be disconnected before doing any work on a vehicle. no,you don't need to mess with the PCM at all..
In addition .. Best to leave the battery cable disconnected for at least 30 minutes to reset Keep Alive Memory (KAM) especially on fuel related components replacement... Just saying, because it not going to take that long to swap out the MAF - so just 'make' it take that long! .. (30 minutes is a plenty)
Thanks, dealer wanted to charge me $400 to replace MAF and then $110 to reflash PCM. I am opting to try it myself but wanted to make sure the PCM did not really need to be reflashed like they said because I can't do that myself.
