The shift lever on our 2000 Volvo S40 occasionally (not regularly) gets stuck in Park so that turning the key won't start the ignition. The car "thinks" that it isn't in Park. We can jiggle the lever and eventually it will drop into Park and then start, but this is a completely random process. So we are thinking that something is wearing out and that we might have to replace something, but we don't know where to start. Any suggestions would be welcome.

It sounds like the Neutral Safety/Gear selector switch is wearing out which is some what common on Volvo. Have a good tech verify this, but this is where I would focus my inspection. http://repairpal.com/volvo-repair-in-san-francisco-california
My daughters 2001 S40 had the same problem. A little WD40 squired into the button on the shift lever fixed this problem. I think the button got sticky over time and a little WD40 freed it up. Wrap a rag around the shift lever and then spray into and around the shift lever button…work the button several time and see if this helps free it up.
On these cars it is quite common that the shifter knob release button cracks at is hinge point causing the issue you are having check it and if you find a crack the knob needs replace...Good luck...
Has she had the problem since? I'm having the same issue and will try this tomorrow. Car is gonna have to sit for the night I guess
