how do we remove the front windsheild side molding, so we can replace the windshield? Even the glass shops can't figure it out.

A professional glass installation shop can handle this. Please find another glass installer -- usually a mobile one -- who can handle replacing your windshield with no trouble. This is definitely not a "do it yourself" job.
Like I said, a number of glass shops couldn't figure it out without possibly breaking the side glass molding. Two Volkswagon dealers mechanics couldn't even find it in their manuals. The Cabrio was a piece work, throw together convertible from a few different cars. I've had this issue with mechanical problems also.
Simple: Pry the moldings off and saw around windshield using piano wire .. While sitting in front seat, push glass out with feet. Most likely find a video on YouTube!
