I'm trying to replace the front rotors and they are stuck. Is there a process, a trick or are they still secured with bolts I can't see. The pads, caliper and caliper holders are off. I've tried hitting it hard with a rubber mallet but no luck.

Sounds like the rotors are just rusted to the hubs. You have done everything correct. There are no "secret bolts" just replaced a set today.
there should be two threaded holes opposite each other that accept a screw bolt. Tighten the bolts in the holes a little at a time to back off the rotor. make sure you use the right size bolt and hardened steel.Tighten one bolt a little then the other.
Can you explain this a little more? I have a 03 Toyota Avalon and can not get the dang rotor off. There is nothing in the manual about it but I do see the threaded holes. I don't see anything in there to put some kind of driver into to turn it. Please help.
Kaz121 is absolutely right, size of bolts is 8mm x 1.25 thread.
