What is your question?
I recently had my car repaired at Nissan dealership. They replaced water pump, set my idle back, and fixed a gasket. Three week later, my check engine light comes on and I took it to them and they said I need a new engine because of a head gasket, which I thought they fixed. They said it was not their fault because the only way they could have known this was if they took it to a machine shop. So I spent over 1300 dollars and at a lost.

They ought to know and it is general practice to have the head always checked before reassembly! They should have automatically had that done to cover their as-, unless you told them not to, it's their fault for not having it checked. I won't put one back on without having it checked, just to make sure.
You can do what you want but if you continue to drive it matters only get worse.
If they said they replaced a head gasket, how many are there? and why wouldn't they have seen it in the first place, someone put stop sealant in my car before I took it to them, and they said they got most of it out, could this cause the head to crack
The stop leak was probably put in because of the leak. It's sent to the machine shop to make sure it doesn't leak with a pressure test. A straight cylinder has usual one a V is usually with two.
They said it was still some stop leak in there. How long can I drive or should I drive my car before I decide what to do
