Running hot. Water pump replaced. Oil changed. Won't run hot for mechanic.

Starts after 30-50 miles. Nothing over 70 mph. Red light warning stop engine. Fan runs for about 90 seconds and then runs fine. I can feel it "big down" when it starts this. HELP! 142000 MILES.
