2015 jeep cherokee coolant temperature range

Coolant temp started rising from 190 to 212 while stuck in traffic for 30 minutes When the temp reached 212 traffic let up and temp slowly lowered while driving. Now it seems to fluctuate rapidly even at a 2 minute stop light from 190 to 208. 2015 Jeep Cherokee. Is this normal?
