We are rebuilding the engine and would like to get rid off all the vacuum lines.

Is this going to be a race truck , with no emissions and no accessories? No vacuum to brake booster?

You'll need a mechanical Weber carburetor to replace the Hitachi, that'll get rid of most of the lines. Still need to plug them up though.
