The truck runs fine for the most part, except the check engine light is on and when I accelerate, it stalls. If going on the freeway I have to ease it to go faster (getting it to 60mph is a slow process) and the RPM shoots to 5 or 6 when I try to speed up, especially on the freeway. I just had an oil change last month, so I don't think that has anything to do with it.
What makes this problem better or worse?

Best route to select here is having an experienced mechanic test drive the vehicle. There are simply too many possibilities that can cause your concerns for online guesswork. Posting a list of these possibilities is not beneficial at all. Good luck!
In addition to Pushrod's answer, this vehicle has an A4LD automatic transmission. The internal mechanical and hydraulic components of the transmission are all that can possibly influence an RPM flare like that -- as there are no electronic controls for this transmission. The shift points are regulated by throttle input and engine vacuum through a vacuum modulator. It seems like the vehicle could be losing gear engagement at some point, and at other points may be in the incorrect gear causing a lack of acceleration. And all of this is likely unrelated to a check engine light on a vehicle of this vintage. Hands on testing from a veteran technician who was familiar with these vehicles 25+ years ago would be best.
