How do I get the gas cap light to go off?

Did you get this new cap from Chrysler dealer? .. Have had some problems with the aftermarkets! .. Best to have EVAP system *smoke tested* so the actual leak can be located... Gas cap is just the most common failure and the first thing the module displays... May actually have a leak elsewhere in the system.
