Temperature rising above 210 degrees From a Stone Cold and overheating

Repair shop is telling me that it's okay for my truck to run from 210 to 240 degrees it never went above 210 before they fixed my front end collision this is the fourth time I've brought it back for this issue the fan has been replaced I am not towing anything and when I use the air conditioner at all and have to idle or on an incline it immediately jumps up to over 2: 10
