What would cause my Low Coolant light to stay on if my coolant isn't low?

My low coolant light will not go off. The coolant isn't low...it stays full, so I don't assume there are any leaks. Ive replaced the sensor, and that's not it, either.

Happened to me, I replaced to a new sensor. The light still came on for awhile, but later disappear for good. May be the ECU needs some times to adjust!?
