Car just started running badly as if it’s not getting gas changed the cats n it’s still feels as if it is not getting gas if I push the gas peddle to the floor

My temp sensor never worked so I changed the coolant temp sensor n it still does not read. But checked w/infrared temp and one of the cats was almost 700* the other 260* so I had them changed with new ones changed the fuel filter and straight wired the fan to a toggle switch to make sure it’s on and it’s still running like poop what could it be

What makes this problem better or worse?

Runs better once the car has accelerated ated

A few days it came out of no where went from driving great I parked to running badly as if it was not getting gas and over heating
