If I remove the crank hub bolt on my N62 engine will the timing sprocket stay in place?

Why do you want to remove the center bolt anyway? ... IF just want to remove the crank balancer (pulley) remove the smaller bolts - no need to remove the big center bolt. Wel, unless you have the proper tools - you ain’t gonna get that bolt out anyway! Good luck!
Specific tool required to prevent engine rotation for removal of the actual crank bolt - in addition to a VERY LONG breaker bar and some serious muscle!
