Engine coolant temperature sensor failure diagnostics

Just had the thermostat replaced in my 2014 Cadillac ATS on 12/4/2020. Has not remedied the problem. The engine remains on the cold setting according to the dash gauge when driving under normal conditions. However, get a warning on the dash the AC has been turned off due to a hot engine. Could this be the Engine Coolant temperature sensor? Thermostat has been replaced, and when the engine is turned off, the fan continues to run for several minutes.
