Rebuilt engine wih only 2550 miles and this is 2nd thermostat and 2nd overheat problem

To replace the thermostat the alternator has to be removed it is located in a housing secured by two nuts, (10mm 12mm). It is common practice to replace the thermostat when installing a "new" engine. As Dave asked why did the first engine need to be replaced? Could it have had a restricted radiator or a cooling fan that doesn't come on?
Cracked engine block at 124,000 miles. Two bolts at backside of engine were "wollered out" - and would not hold the bolts. Even though the head gasket blew, the engine still cracked. The thermostat was stuck but the radiator did not blow.

My reasoning for asking what happened in the first place is because I'm drawing to a pattern. Your original engine sounds like it failed due to extreme overheating. This engine is overheating too. Time to get to the real bottom of the issue, whatever it is. Like Patrick said below, I would be looking at a restriction of air flow at the radiator (like debris between the condenser and radiator?), or faulty cooling fan operation. Don't be seeking a thermostat at this point - seriously consider all aspects of the cooling system and any possible restrictions in flow - coolant wise and air wise.
