How ofter should I change the transmission fluid? I have found that I am leaking fluid, will getting the fluid changed and a new gasket solve my problem?

I say replace the fluid and filter every 60,000 miles or more often in hard usage, or when it changes color or smells burnt. If your transmission pan gasket is leaking, a service should solve that. If it's leaking elsewhere, that's something else again. Get someone to diagnose the leak when it's serviced. Go to a transmission shop or a Ford/Mercury specialist.
