How ofter should I change the transmission fluid?
I have found that I am leaking fluid, will getting the fluid changed and a new gasket solve my problem?

I'm gonna speak up and suppliment Bob here - go 30,000 on that transmission. That's Ford's recommendation in 1999 for the 4R70W that is behind your 5.0L V8. It's cheap insurance for long life out of your transmission. That unit is pretty darn solid.

I say replace the fluid and filter every 60,000 miles or more often in hard usage, or when it changes color or smells burnt.
If your transmission pan gasket is leaking, a service should solve that. If it's leaking elsewhere, that's something else again. Get someone to diagnose the leak when it's serviced. Go to a transmission shop or a Ford/Mercury specialist.
