Q: should we replace shocks/struts? on 2000 Honda Odyssey

Our minivan has almost 200,000 miles on it and has never had shocks or struts replaced. The ride is somewhat rough and we hear rattling noises when we go over bumps. Is the rattling from the old shocks/struts or is it something else? How often should shocks/struts be replaced?

Your shocks and struts are worn out at 200k miles for certain. Get them replaced.
They need replacement at usually between 50k and 90k miles, in my experience.
If you want to find a Honda specialist, here's our directory link for you:
We couldn't find anything in our owners manual addressing the problem. Our mechanics never tell us what needs to be done, they just do things if we tell them what is wrong. I wish we could find a mechanic who would really give the van a good going-over so that i could be sure it is in good working order--and not be a rip-off artist.
We used to use Annandale Shell (now out of business) for repairs, until Japanese Auto Service told us that one of the repairs they did (to the tune of $2000) was completely unnecessary.
