Engine runs good until ac turn on after a while at 72 degrees or if turn on high it starts in go into the red zone. The ac also becomes inefficient

When the AC triggers overheating it's usually because the cooling system is already marginal and the added load of the AC compressor and condenser pushes it over the edge. The likely culprits could be a weak radiator cooling fan, low coolant, or a partially clogged radiator. On this generation Tiguan the electric cooling fan is especially worth inspecting since it needs to ramp up when the AC is running. The fact that your AC also loses efficiency when it overheats tells us the condenser isn't getting properly cooled either, which points right back to that fan!
