I was told by my Toyota service man, to let my 2008 Toyota FJ heat up just enough so the thermometer moves before I drive, is this necessary?

It is not necessary to "warm up" your vehicle before driving.

May not be necessary but it sure feel better in COLD temperatures!
The only negative I see with pre-warming the engine is 0 mpg during that time - otherwise it’s not going to harm anything else to do so!
