i replaced my oil temp sencor (drain plug) and guage is still not accurate. what should i look for to resolve this matter?

Does your Subaru WRX have a factory fitted oil temperature gauge or is this an aftermarket gauge. I just looked at a Subaru wiring diagram and didn't see an oil temperature gauge. What oil temperature readings are you getting at normal driving conditions and under load at higher engine RPM's?
I have a similar issue with my oil temperature gauge that was installed by the local dealer when I received my WRX back in 2002. It is installed in the oil drain and has a wire that runs up to the dash mounted gauges (turbo boost/oil change/voltmeter). The gauge worked for about a year or so and then quit working. Seems to me a better installation would have required drilling a new hole and installing the oil temp sensor in that and leaving the oil drain plug for oil draining period. Haven't determined how to troubleshoot this yet because I have no information on the oil temp gauge/wiring diagram/oil temp sensor/etc.
Many instruments in cars are inaccurate people get used to what is "normal or abnormal". So sad because anything I put on my cars I want to be accurate. Oil pressure and temperature gauges that have capillary or burden tubes are most accurate. battery voltage varies from say 10 or 11 volts and up to 14.7 volts or so. Gauges on the instrument cluster on most cars have a voltage stabilizer built onto the circuit board. Regulating the voltage increases the accuracy of the gauge reading. I am curious have either you seen a difference in temperature reading using standard vs synthetic oil? What readings do you get. On the dyno on old British engines we made more horsepower if the oil was between 210 and 220 degrees F.
