There was not an option for V6 engine, but it is. What is the easiest way of changing the serpentine belt on a 2000 Saturn SL2? Thank you...

There is no 'easiest' way to replace a serpentine belt. The first time you do it it's really confusing and hard on the fingers, so be careful if you try it. You need to note the routing of the belt and release tension on the belt tensioner, remove the belt and put a new one on exactly the same as the original was, There's usually a belt routing diagram under the hood somewhere. Here's a directory link for you: http://repairpal.com/saturn-repair-in-saint-peters-missouri
For the 2000 SL2 model serpentine belt is simple to replace. An approach I would suggest would be to add a jack stand to the right front of the vehicle. Place a floor jack under the oil pan. Loose the five 15mm nuts from the upper motor mount. Remove the mount and jack up the engine to create extra room to work with. Use a 14mm long wrench on the belt tensionor. Release tension and remove the belt. To install the new belt suggest starting with the crankshaft. install the belt around the crankshaft and with left hand wrap the belt around the belt tensionor with ungrooved side contacting the pulley. Next have the grooved side of the belt around the alternaor and p/s pulley. Tuck belt near idle pulley and hold while working on right side by going around the water pump and ac pulleys. Once belt is on all pulleys except idle pulley hold belt with right hand and use left hand with wrench adjust belt tensionor and slide belt under idle pulley. Verify belt is properly on all pulleys. Reinstall upper engine mount. ~ Note can also remove R/F tire and plastic sheild for more access on lower half.
I am so thankful for this guide that you've provided! Straight forward, simple and effective. Do you write guides like these often?
