Three of my monitors are not set and are preventing me for having my car tested.

How can I set or ready one of the following? Evap, O2, or Cat monitors? I need to have one more set as I'm allowed to have two that are not ready. I have tried several different starts, driven several hundred miles and I do no have a check engine light and still get over 30 mpg as car runs fine. Thanks. Bill
