I had my timing belt snap last November and that bent the head and she was out of commision until about a month ago. We got a new head and gasket, but now that it's in, a few seconds after I start her up, she bogs down and idles at about 850rpm or just shuts off completely. When I put it in gear, even with the pedal to the floor, I only get a little more than 1500rpm and she barely moves at all. I've checked for vacuum leaks and I haven't found a one of em, though we do hear a hiss when I give it full gas in gear. Any advice on where to look and how to check for the problem is very welcome because we are at a loss. Thank you.

Many variables here and it will be difficult to diagnose online without looking at it. I would start by checking for codes to see if anything is current like a throttle issue. If there aren't any codes and there are no vacuum leaks then check for fuel pressure.
