I started to observe a problem which initially I didn't know what to believe (it happened rarely), basically the AC goes off for about 30 seconds up to 1 minute then starts and works fine. The only thing is that this started to happen more often (like almost everytime) as it was doing it in the past (once a month .. couple of weeks perhaps).

It could be many things, unfortunately and without hearing the noise first hand or being able to do some basic diagnostic tests or be able to drive the car, its hard to say what the source of the noise may be. Either pressure drops bellow a certain pressure threshold and the low pressure switch cuts off power to the compressor or the system freezes and shuts down until it thaws out. Need to look at system pressures and properly diagnose what is going on.
Patrick, you figured out this properly ! there is a sounds involved into this hole story, but this sound (squealing belt sounds) happens only on cold engine in the morning when I put it into reverse. But when I start to drive it forward it goes away ! also when I reached to a mechanic to check it (not AC guy) it did not happened on warm engine (but the AC goes away when it's warm), so he just oiled some pulley and there is no error code thrown or anything obviously wrong.
