Since it is probably a sensor, how far is it okay to drive it? If I depress the clutch, it seems to make the light go off sooner.

I would check your anti freeze level and to see if the cooling fan is working, If the coolant is low top it up and pressure test the cooling system for leaks ,do you have a temp gauge and a light or just a light?
My antifreeze level always checks good. I have a temp gauge t hat does not show hot. I don't think I have ever had the pressure test done
If it is just the light flashing and the gauge reads ok then you can drive it until you get the sensor replaced
This morning the light came on and stayed. I kept an eye on the gauge and it did not move.
when you say the gauge didnt move did you mean it stayed at 0 or at operating temp
It rides at two "tics" on the "C" side of midline. As usual
then you should be okay to drtve just get the light fixed.......
