What is your question?
Hydraulic fan fluid down by half, added proper fluid 5 days ago. Antifreeze needs topping off every couple, few months. Next day after temp indicated car was overheating, I drove it for 15 minutes/3 miles without (same distance as day before incident)the problem re-occurring. Had the car for 5 years. This usually occurs during hot months and a lot of stopping and going. Also, all 8 coils have been replaced twice since 2004. Thank you for your help.

Clogged radiator , bad thermostat , leak , u need more testing , maybe Guage sensor is bad , maybe not overheating??
Tks 4 ur reply. I did several hrs of research yesterday before taking it in for a diagnostic this am. No error codes came up and they ran the car for "long time" w/o any symptoms occurring. Not sure when steering fluid was last checked. Some online posts say it can play into overheating issues along with the ones u mentioned. Unfortunately, there is a pattern of the same issues I've been having that lead to tranny or engine replacement. The car drives like butter and knows where it's going!!
