How can you tell if a new ECM PCM Engine Control Module is working correctly?

My 2000 Jeep Wrangler TJ still stalls out once in a while and sometimes runs a little rough. No engine light. Sensors have been changed, Catalytic converter has been replaced, cam shaft sensor, crank shaft sensor, new head gasket O2 sensors, Map sensor, ICA Valve, throttle position sensor. Mechanic said he doesn't know why it does it, because he is not receiving any reading when tested. air conditioner was fixed.
