What is your question?
The other morning when driving to work I noticed that my 2011 Infiniti G37XS, (120k miles) accelerated slow, like it was missing a gear. When I tried to downshift, (paddle shifters) I got the warning sound indicating that the revs were too high. I was doing 80 mph in 6th and I wanted to downshift to 5th and then 4th. I have down this countless times without any issue. I am just speculating but it is like the transmission went into a safe mode to limit torque and/or revs in 3rd and 4th gear. When accelerating the transmission hesitates to downshift. Yet if I place the car in manual mode it will hold whatever gear I selected until I change it. Is this an ECU or sensor problem? My commute to/from work is mostly highway miles. I typically cruise at 85-90mph. This particular morning I was doing a steady 100mph. I applied gas to increase to 110 to pass a group of car and that was when I noticed that the transmission stayed in 7th instead of dropping to 6th or 5th.
What makes this problem better or worse?
nothing

It would be interesting to see what gear is being called for in the transmission and what is actually engaged when you hit those paddle shifts and attempt downshift. The only way to start to see what's happening is to have a diagnostic tool hooked up and monitor this information. Keep in mind: no technician can safely exceed posted speeds, however, your concern seems to be happening regardless of the high speeds. You could have electrical concerns or internal mechanical concerns -- testing is needed.
