What is your question?
turn on the car let it get warm drive off turn on the heat and temp gauge goes down significantly after its fully warmed or its been a decently long drive it doesnt do it
What makes this problem better or worse?
driving it long enough in one drive doesnt make the temp gauge go cold .. when the engine is somewhat still cold and you want to heat up the inside the temp gauge could be fully halfway and it will drop down cold a very big amount. or maybe its not the ac heat maybe theres an underlying issue im missing. only had this issue in the cold so far.
How long has your 2008 INFINITI G35 had this problem?

Hi, this is Bo, an auto expert on RepairPal's Car Genius team! Your G35's temperature gauge is doing a little dance when you turn on the heat, and it's got me thinking about a couple of possibilities. When you turn on the heater, it draws heat away from the engine to warm up the cabin. If the thermostat is stuck open or opening too early, it might be allowing too much coolant to flow, causing the engine to cool down more than it should. It's like wearing a parka indoors—unnecessary and a bit overkill. Since the issue seems to resolve after a longer drive, it might be that the engine eventually reaches a stable temperature despite the thermostat's antics. I'd suggest checking the thermostat and possibly replacing it if it's not functioning properly.
