If the engine gets off timing or timing belt breaks; would it bends the valaves? I hear some GM & FORDS don't.

This is an interference engine and if the belt breaks it will bend the valves and possibly damage the pistons
what are the chances of piston damage? My belt broke and i am hoping just to replace the head.
yes it will, on a 2000 hyundai tiburon, make sure you replace timing belt when its due.
