What would call my steering wheel to lock

What is your question?

While I’m driving I can go to turn and it will automatically lock on me and won’t let me do anything. I’ll have to sit there and turn the car off for like a minute and it’ll sometimes come back if not I’ll have to turn it off again to keep going.

What makes this problem better or worse?

Just noticed so not sure yet

This sounds like a serious electric power steering issue that should be checked and resolved before driving the vehicle again. This is a major safety issue.
