What will happen if I leave the condenser out of my car along with the H lining?

I put water in the radiator, after a short time the car will act as if it's overheated,I soon start to smell a wierd burning smell, it will make a clicking sound from under the hood before the car shits off on me . It won't start back up right away . Only if I let it sit and cool and I add water . But I don't know how long.

What makes this problem better or worse?

If I keep driving and not turn my engine off .
