in every gear, when stepping on the gas, there is a lound knocking,pinging rattle that seems to be coming from the stick shift, and it stops when you back off the accerelator. Could it be clutch bearings or valves? we checked the sparks and wires and went with higher octane and it did not help.

Its so hard to say without being able to hear the sound first hand. It could be several things if it is engine related a lean running condition or low octane/poor fuel quality can cause "pinging". An Exhaust Gas Recirculation problem can also cause pinging if the system does not work properly. Could it be really worn CV axles, if it the outer joints they would rattle more on tight fast turns?
