Is their a trick to removing the knob from the Headlight switch?

There is a little spring with a little button that I pressed down on and it just popped right off when I pulled on the knob.

That is what you need to do again! Pull it out, push button then push pull just slightly, you are trying to hard! I posted how to fix the lights on your other question.
