i'm not sure what to take off to access those three spark plugs

You may have to come up from underneath to get to them. The shop manual does not indicate any additional part removal for access.
You can do this a couple of ways. The easiest for me was this: Remove the air filter cowl and connecting air vent. You will be doing the removing of these plugs from this side of the vehicle. You will need the long 3/8" extension, maybe the universal, though I didn't need it cause I have long arms. Get some cardboard to lay across where you'll be reaching. You'll thank me for it later. Place your cardboard, locate the farthest spark plug from you. There is an obstruction just before you get to the plug with your socket. Go BEHIND that THEN, place the socket with extension on the spark plug and remove. It's hard to explain, but if you fish your hand in there before you start actually trying to remove the plug, you'll feel what I'm talking about. Just go beyond that and your socket will drop right in. The second way requires the you remove the windshield cowl. That involves removing about five push on clips, unclipping the vacuum line that is attached to the cowl. Then you can remove the top half of the cowl. Then remove two or three screws that will allow you to move the rain gutter, which also gives you access to the air vent filter. If you've never changed it, that could be why your a/c with the windows up smells funky. With the cowl out the way, you can reach down and drop the socket on the spark plug for removal.
