While driving down the highway at around 55mph the check engine light popped on and I felt engine shudder. After that it would bog down when trying to accelerate. Made it home and tried to start the next morning, it just cranks and cranks. One thing I noticed is when I turn the key on (not start position) the fuel pump runs constantly, where as it used to run and cut off like it built up pressure.

Borrow an OBD1 code reader from a local parts store (AutoZone) and read the codes. You will probably get better answers with a known code. Be sure it is for an OBD1 vehicle as OBD2 will be useless. Post the actual code not what the reader says it might be.
The check engine light will indeed stay on solid with the truck not running. Yet it will not produce any codes, as it is not indicating a failure unless it comes on and stays on while running. You will need to do a fuel pressure test, and check your relays - fuel pump and PCM.
