freeway driving 65 miles an hour with weather in the 70's no problem, start up a long hill in fifth gear the heater has to be turned on to bring the temperature under control to avoid it overheating and stalling.

Sounds like your radiator core is becoming clogged and needs to be serviced by a radiator shop because if you can maintain the proper temperature adding the additional cooling area of the heater core ( like a small radiator ) that tells me that the radiator isn't performing properly and needs to be serviced.
Check the fan clutch for play and see if it speeds up with higher RPM's or slows down with higher RPM's. If it slows down, replace the fan clutch.
