What is your question?
I noticed smoke coming from the hood of my Escape as I was driving today, 3 days after the oil change. I pulled over, noticed liquid on the engine and oil cap, and some leaking from underneath the car. I called the shop which happened to be nearby. Mechanic came to look at it, said it was a coolant leak, likely from the hose. He okay'd it for me to drive to the shop so he could take a better look at it. Got a phone call later saying sure enough, there's a hole in the hose that leads to the water pump... a $255 +tax repair. I told them not to touch it. My question is if it's possible that the mechanic could have caused the issue whether by accident or on purpose, or if it's likely that it was already damaged before the oil change.

Hello, with hoses that are 17 years old -- they are all susceptible to leakage at any time. 7-10 years is maximum life for a hose, anything more is a situation where you are on borrowed time. I can't see any reason or way they could have caused the leak; however hands on assessment by another shop could be another option to verify.
