What is a hydraulic pump?

What is your question?

Got a diagnostic test on the car and was told it was the hydraulic pump. I have no idea what that is. The car doesn't start after it sits for a long period (over night) jump starts easily and will usually restart after a short period of time.

The only hydraulic pump on the vehicle is the power steering pump which has nothing at all to do with the problem you posted .. The person(s) that gave you that information were confused or mistaken at the time .. Suspect failing battery OR a parasitic draw on the battery while vehicle is parked .. You need to get another opinion after hands-on testing has been performed, by 'qualified' personnel.
