Really, a hands on detailed analysis is needed to determine what is wrong and what needs to be done to resolve the concern. You could have an air pocket in the cooling system for some reason. You could have an engine thermostat issue, preventing the engine from getting to the correct temperature all the time. You could have an internal engine coolant leak.
