The temp gauge will not read, but if I turn off & restart the van it will read fine. Also my heater is having the same problem. There will be no heat then if the temp rises to over 1/2 way the heat will kick on & run & the temp goes back down. The temp gauge will sometimes show hot when the engine is cool to touch. I have replaced the tstat & had air removed from the coolant system. There are no leaks (pressure tested). It may be haunted..lol

Best to get the instrument panel and the climate control system diagnosed, because it sounds like you have covered the basics with the t-stat etc. The fact that a re-start changes everything, sounds like it is an electrical issue, thus the recommendation for the diagnosis.
