My temperature gauge stopped working and car says engine hot ac off. What's happening

My fan comes on as soon as I start my car, even tho it's cold outside. It stays on for about 30 seconds after I shut it off. Temp gauge stopped working. Cars saying engine hot ac off. Changed the temp sensor but I did break off a piece of the connector. Connector still went right in to the new sensor tho. Do you think I need a new connector? I have heat. Put coolant in radiator but it took a long time to go down. Only let me put about a cup at a time. Theres not much pressure in the hose where the radiator cap is. I check under the hood after driving it and nothing's abnormally hot. Could it be the relay? Thermostat? And another thing, my messages and digital odometer on my dash only come on at night. I thought maybe it was only when the lights are on but I turn the lights on during the day and they did not work
