On your 1997 Chevy S10 with the 2.2L, an engine that runs better with the MAP sensor unplugged strongly suggests either a faulty MAP sensor sending incorrect readings to the ECM, or a vacuum leak that is causing the MAP sensor to read incorrectly. When the MAP sensor reads incorrectly the ECM can over-fuel the engine causing exactly the kind of flooding and rough idle you're describing. It's also worth double checking that the timing was set correctly during reassembly, as even a tooth off on a timing chain installation can cause rough running and flooding that no amount of sensor replacements will fix.
