The temperature sensor is the least of your concerns if you have an overheating condition. Focus on the cooling system for proper flow, the radiator for blockage of air flow, and the cooling fan operating properly first off.
Professional quality scan tool is quite capable of testing the CTS for accuracy AND for testing the cooling fans for proper functionality by bypassing the CTS signal and turning on the fans for circuitry testing to insure no open circuits are present.. That will eliminate the cooling fans and their systems operations as a suspect.. However the bottom line is IF you wish to discover the actual culprit - it is going to require *hands-on* testing.
Additionally - while traveling at highway speeds the cooling fans are not required - thanks to ‘ram air’ .. Good luck!
