Problem occurs when sitting at idle for long periods of time, especially at a long stop light, once the car is in motion is cools its self off. But the coolant temp can reach up too 240 degrees and the fans will not kick on. Only is the A/C is actively running will it trigger the fans to cool of the car, then it will stay at about 180 degrees. It’s a 2010 Chevy Camaro V6 3.8L.
What makes this problem better or worse?

Sounds like a cooling fan issue - or a control of the cooling fans issue. It's too hard to say to be sure - without testing with a TECH II diagnostic tool or equivalent - to see the data input that tells the processor information that commands the fans "on". Definitely a problem with the command of the coolant fan. Diagnose the coolant fan circuit would be the best option
