My 07 escalade keeps overheating and goin into limp mode

My 07 escalade keeps overheating and going into limp mode so immediately i shut the engine off and check the coolant, and the overflow is empty and the oils not milky and doesn't show any signs of mixing and dont visibly see any leaks anywhere, any ideas?
