what would cause my caddy to overheat if the head gasket is not leaking?

What is your question?

It seems that it doesn't overheat very quickly until until I drive up an incline.

How about low coolant level, low engine oil level, cooling fans not working, thermostat stuck, coolant temperature sensor not reading. The cylinder head gasket is usually something that becomes a problem after a car overheats.
