We hooked a toggle switch up so I manually turn them on...we changed the water pump, thermostat, sensor and relays.. The gauge never moves higher than like 180 even without the fans on. Whats going on.. The person I bought it from bypassed the AC part on the serpentine belt..could that be why? Or if the gauge is broken would that affect the fans not coming on? Why won't my fans kick on?

Firstly if the ACTUAL engine temperature doesn't reach a higher temperature then the fan is not going to turn on. Use (borrow) a non contact ir thermometer to check engine temperature. Use scan tool to check engine temperature then compare with dash gauge. I’ve seen these engines run for 30 minutes or more in HOT weather before turning on. Yes the ac compressor missing is affecting the condenser fan but that doesn’t affect engine temperature operations.
IF engine overheating becomes a problem - then something has to be corrected. Good luck with it.
