Hi this is Dusty, I'm one of the auto experts on RepairPal's Car Genius team. Sounds like an irritating thing to have to deal with for sure, let's see if I can help. The thermostat helps regulate the temperature of the engine coolant but doesn't relay any data to your vehicle's computer system. Your vehicle does have a coolant temperature sensor that is mounted in the thermostat housing, but there's a second sensor located in the side of the radiator. Those sensors (among others) provide the temperature data to the engine computer, which relays the relevant information to your instrument panel gauges. The issue with the check engine light and the lack of temperature display are likely to be related. If you prefer to do repairs yourself, I'd recommend checking the engine computer to see what faults are stored first, then go from there.
